I go through moments where I feel like my kids are not getting enough fruits and veggies in their meals, and that sends me on a mission to make super healthy food that I know they will still eat!
In other words, I hide the healthy stuff in still pretty good for you food. My kids love quick breads and will eat them for breakfast, snack, and sometimes dessert-especially if I drizzle chocolate over it!
Zucchini bread is the perfect quick bread that is jammed packed with veggies but is still sweet enough that you can’t tell!
For my zucchini bread I try to keep the sugar low, I do half butter and half applesauce, I use a mix of zucchini and carrots, and I toss in some extra vitamins and protein with the use of raisins and walnuts!
Zucchini Bread
Ingredients
- ⅓ cup applesauce
- ⅓ cup softened butter
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups finely grated zucchini
- 1 cup finely grated carrots
- 3 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- 1 cup raisins (optional)
- 1 cup walnuts (optional)
Instructions
- Preheat Oven to 350F
- Combine butter and applesauce and sugar, cream together
- Add eggs and vanilla, stir together
- Stir in zucchini and carrots
- Add the flour, baking soda, cinnamon, nutmeg, and salt and stir together well
- Fold in raisins and walnuts (optional)
- Put batter in a greased loaf pan
- Bake at 350 for 45-50 minutes
