Zucchini Bread

I go through moments where I feel like my kids are not getting enough fruits and veggies in their meals, and that sends me on a mission to make super healthy food that I know they will still eat!

 In other words, I hide the healthy stuff in still pretty good for you food. My kids love quick breads and will eat them for breakfast, snack, and sometimes dessert-especially if I drizzle chocolate over it! 

Zucchini bread is the perfect quick bread that is jammed packed with veggies but is still sweet enough that you can’t tell! 

For my zucchini bread I try to keep the sugar low, I do half butter and half applesauce, I use a mix of zucchini and carrots, and I toss in some extra vitamins and protein with the use of raisins and walnuts!

Zucchini Bread
 
Ingredients
  • ⅓ cup applesauce
  • ⅓ cup softened butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups finely grated zucchini
  • 1 cup finely grated carrots
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 cup raisins (optional)
  • 1 cup walnuts (optional)

Instructions
  1. Preheat Oven to 350F
  2. Combine butter and applesauce and sugar, cream together
  3. Add eggs and vanilla, stir together
  4. Stir in zucchini and carrots
  5. Add the flour, baking soda, cinnamon, nutmeg, and salt and stir together well
  6. Fold in raisins and walnuts (optional)
  7. Put batter in a greased loaf pan
  8. Bake at 350 for 45-50 minutes
  9. Enjoy 🙂
