York Peppermint Patty Cookies

Hey there, this is Jessica from Lou Lou Girls! There are 4 of us Lou Lou Girls. My mom Kim, my sister Cassie, and my sister-in-law Amber. I would classify our blog as pretty much anything goes, since there are 4 of us, the topics are just as varied as we are!

Thanks so much for inviting me to share my recipe for York Peppermint Patty Cookies for the #cookiecountdown2christmas!

Nothing says Christmas to me like peppermint does! Every year I make something with peppermint in it, last year I made peppermint fudge and it was so yummy!
I made these cookies for my book club meeting and no one could stop eating them! My kids were sad when they got home and saw that they were all gone.
This recipe is so so easy, and I bet you have everything you need for it, on hand right now!

York Peppermint Patty Chocolate Cookies (printable recipe by Jessica from Lou Lou Girls)

2 eggs
1/3 cup of vegetable oil
24 mini York Peppermint Patties
Directions: Combine eggs, oil, and cake mix with a hand mixer. Let the dough refrigerate for a half hour. Use a tablespoon of dough to make a ball. Press a peppermint patty into the center of each one and cover it completely. Bake at 350 degrees for 9 minutes.
