Teriyaki Beef Skewers

 It’s time for another wow me weekend and with grilling season upon us our family just can’t get enough of grilled meats, veggies, fruits and more! Tonight we are grilling up nice chunks of beef, sweet mini peppers, yellow onions and sweet pineapple with a teriyaki marinade and glaze! These teriyaki beef skewers are both sweet and savory and a grilling family favorite! We serve these skewers over a bed of rice or a side of fries.

Teriyaki Beef Skewers
 
Ingredients
  • 1 lb beef cubes
  • 1 fresh pineapple, cut into big chunks
  • 1 bag mini sweet peppers
  • 3 yellow onions,cut into big chunks
  • 1 jar teriyaki sauce-I use Trader Joe’s Soyaki-save some to use as a glaze when skewers come off the grill
  • 2 limes
  • 6 or 7 skewers-I find that metal works best

Instructions
  1. Marinate beef cubes in teriyaki sauce for at least two hours or more!
  2. Cut pineapple and onion into big chunks
  3. Take metal skewers and begin placing meat, peppers, onions, and pineapple until skewer is filled.
  4. Place on grill at a medium heat, turning every five minutes.
  5. Use a grill safe glove to turn the skewers!
  6. Grill until meat is cooked the way you like it-I cook until meat is medium well.
  7. Take skewers off grill and put on a serving plate.
  8. With a pastry or grill brush, brush some extra teriyaki sauce on as a glaze
  9. Slice limes in half and squeeze over skewers
  10. Serve after skewers have rested for a little over five minutes

Have leftovers?? In a skillet heat up a little oil. Cut up leftover beef, veggies, and pineapple and saute in pan. Add your favorite cheese and mix around until melted. Place meat mixture in a pita, wrap or roll! This leftover meal with have you doing the happy dance!
