Even though its March I am going to share one of my fave Thanksgiving side dishes for 2 reasons…its snowing here and I just earned my free turkey from the supermarket!
This sweet,yet good for you dish is worth going back for seconds!
Sweet Potatoe Casserole |
2 1/2 lb can yams
1/2 c white sugar
1/2 c milk
1 beaten egg
5 T butter..divided
1 t vanilla
1/2 c brown sugar
1/3 c flour
1/2 c chopped pecans
1/2 bag of mini marshmallows
Cook yams in microwave until hot…about 3 or 4 mins
Add 1/2 c of white sugar,milk,egg, 3 T butter & vanilla.
Stir to break up the potatoes.
In a small bowl combine brown sugar,flour, 2 T butter until it resembles course crumbs.
Stir in pecans
Place yams in dish and pour pecan mixture over top
Bake uncovered in 350° oven for 25 min.
Add marshmallows on top and heat for 3 minutes..then dig in!
