It’s peach season here and they are sweet, juicy and bursting with summer flavor. My family loves peach jam, peach pie, grilled peaches, peach crumble and more! The possibilities are endless with this great fruit! We was playing in the kitchen with peaches and my blonde sweet girl and I created these stuffed peaches with warm brown sugar glaze. We ate them for lunch they were so good! Sweet peaches, a buttery oat topping and the warm brown sugar glaze had us loving lunch!
Stuffed Peaches With Warm Brown Sugar Glaze
Ingredients
- Filling:

3 medium
peaches -
1 teaspoon
granulated sugar -
1 teaspoon
corn starch - Topping:
-
1/4 cup
quick oats -
1/4 cup
flour -
3 Tablespoons
butter, softened -
2 Tablespoons
sugar -
1 Tablespoon
cinnamon - Glaze:
-
2 Tablespoons
butter -
1/4 cup
water -
1/2 cup
brown sugar -
1 teaspoon
vanilla
Cooking Directions
- Preheat Oven to 375F
- Halve the peaches-with a knife make a cut down the middle of the peach and circle all the way around. Do this twice, it will allow the pit to become loose from the pulp. Then twist the peach and depending on the ripeness of the peach, one half should pull right apart.
- Use a spoon to gently scrape out the pulp, leaving enough to make a little bowl. You only need a little pulp, about 1/2 cup.
- Place the peach halves in a baking dish.
- In a small bowl dice the pulp into small pieces, if it is not already small from you scooping it out.
- Add 1 teaspoon of sugar, and 1 teaspoon cornstarch. Fill peaches with pulp, a heaping Tablespoon each.
- In another small bowl combine oats, butter and sugar. Use a fork to create crumbs.
- Top each peach with the crumb mixture, and sprinkle cinnamon on top.
- Bake in the oven at 375F for 30 minutes.
- While the peaches are baking, place a pot on the stove on medium heat and bring to a soft boil the brown sugar, water, and butter. Allow to thicken. If not thick enough, add a little more sugar. Remove from stove top, and stir in vanilla. Allow to cool a bit before drizzling over top the peaches.
