Hi three kids and a fish readers. It’s Amie Jo from Life’s Little Projects and I am so excited to be here today sharing a twist on a holiday cookie recipe with you! I love the desserts and crafts that come with this time of year!
So when I was asked to join in on the cookie countdown I got really excited. My kids are both really young and I have not had the time to bake like I used to, so this was a great excuse for me to get my baking on. I looked through my recipes and did not see one that I really wanted to do.
My mom and I had been talking for a while about making a sugar cookie using some fun flavored coffee creamer. I thought I would use one of my sugar cookie recipes with a recipe for making my own coffee creamer.
I have never shared any of my coffee creamer recipes (I have so many ideas and not enough time to do them all) but I know I need to. The coffee creamer recipe calls for a can of sweetened condensed milk, milk, cocoa powder, vanilla extract and peppermint extract. I used all the ingredients in the cookies except the milk.
I hope you enjoy them as much as my family did. I also had lots of fun taking pictures and could not help but share some of my favorite ones.
Peppermint Mocha Sugar Cookies
Ingredients
3 cups flour (for a nice and puffy cookie cake flour would be best)
3 1/2 teaspoons baking powder
1 1/2 cups sugar
1/4 teaspoon salt
1 14oz can sweetened condensed milk
1 teaspoon vanilla
1 teaspoon peppermint extract
1 cup shortening
3 Tablespoons cocoa powder (sifted)
2 eggs
1/2 cup cornstarch
Instructions
In a medium bowl mix the cornstarch, cocoa powder, salt, baking powder and flour. Set aside.
In a large bowl mix the sugar, sweetened condensed milk, vanilla, peppermint extract, shortening and eggs. Make sure to mix well.
Slowly add the dry ingredients to the wet making sure to mix well. Knead the dough and set in the fridge for at least an hour before baking (this helps them to keep their shape).
If you would like you could roll out dough, cut cookies and put them on the cookie sheet before setting in the fridge. Otherwise take out of fridge, roll out dough and cut cookies.
Bake at 350 for 10 min.
Notes
Baking time varies on your oven and how thick the cookies are.
Even though I suggest cake flour I did not have any on hand so mine were made with all-purpose flour.
These are wonderful without any icing but you could add icing and decorate these cookies.
I do have to say that they are better than they look and if you like peppermint you will love these cookies.
