Peanut Butter Cup Mini Cheesecakes
Ingredients
- 16 cupcake liners
- 16 vanilla wafers
- 2-8 ounce packages cream cheese, softened
- 2 eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 16 Reese’s peanut butter cups
- hot fudge to drizzle over top-optional
Instructions
- Preheat oven to 350F.
- Line a muffin tin with the cupcake liners.
- Add a cookie to the bottom-this is your cute crust!
- Using a mixer, beat together cream cheese and sugar.
- Add one egg at a time, stir in the vanilla.
- Unwrap the peanut butter cups.
- Take a teaspoon of filling and spoon on top of each cookie.
- Place a peanut butter cup on top of the filling.
- Take another teaspoon of the cream cheese mixture and spoon on top of the peanut butter cup.
- Bake at 350F for 20-22 minutes until cream cheese mixture is firm.
- Chill in fridge at least an hour before serving!
- Drizzle warm hot fudge over top.
