The sun is blazing, the dusty road is hot, the walk is long, and it is worth it because we know at the top there are sweet peach trees. Peach picking has become an annual family tradition that we enjoy right before the kids go back to school. Our kitchen becomes a peach festival as we eat, bake, cook, grill and create amazing dishes with the peaches we pick.
This peach dessert has a sugar cookie crust on bottom, a cheesecake middle, and a fresh peach top that has a maple syrup drizzle. Adding fresh whipped cream rosettes makes these peach cheesecake bars even sweeter.
Peach Cheesecake Bars
Ingredients
- 17.5 ounce Betty Crocker sugar cookie pouch and the ingredients to make the cookie
- Cheesecake Filling:
- 8 ounce cream cheese
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- Topping:
- 2 large peaches-sliced
- Drizzle:
- ½ cup powdered sugar
- 1 Tablespoon milk
- 2 Tablespoons maple syrup-check out this {homemade maple syrup}
- whipped cream- optional
Instructions
- Preheat oven to 350F
- Add a piece of parchment paper or grease an 8×8 baking dish
- In a large bowl mix together ingredients to make the sugar cookie.
- Press the sugar cookie dough in the baking dish until evenly spread.
- Bake at 350F for 20-25 minutes.
- While that amazing sugar cookie dough is baking use a mixer to mix together the cream cheese, ¼ cup powdered sugar, and vanilla extract.
- When cookie is completely cool spread the cream cheese mixture evenly on top.
- Place sliced peaches over top the cream cheese mixture in nice rows.
- Mix together the ½ cup powdered sugar, milk, and maple syrup. Drizzle over top the peaches.
- Top with whipped cream rosettes-optional
