For this Throwback Thursday I am featuring one of my absolute favorite cookie bars to create when I am in a pinch and I need a dessert quick!
Company is coming in a hour and you want to serve up something sweet. Your pantry and fridge are empty of ready to go snacks, what do you do? Cookie bars are the perfect solution! They are rich, thick and full of flavor like a cookie with a fraction of the work! Stir up these mounds cookie bars packed full of coconut and chocolate in no time at all! These mounds cookie bars go great with a cup of coffee or a juice box!
Mounds Cookie Bars
Ingredients

1 cup (2 sticks)
butter, softened

1/2 cup
granulated sugar

1/2 cup
light brown sugar

1
egg,beaten
-
1 teaspoon
vanilla extract
- 1/4 teaspoon salt

1 teaspoon
baking soda
-
2 1/4 cup
all purpose flour
-
1 1/2 cups
shredded coconut
-
1-11.5 ounce bag
chocolate chips
Cooking Directions
Preheat Oven to 350F
Grease a 8×8 baking dish
Cream together the butter and sugars. You can use a mixer or do it by hand.
Add the egg and vanilla and stir until combined
Add the salt and baking soda and mix together
Add the flour little by little and mix until combined
Stir in chocolate chips and coconut- Place cookie dough in baking dish and smooth out until the cookie dough is spread out evenly
Bake at 350F for 25-30 minutes depending on how chewy you like your cookie bars
Cool for 10 minutes
