Loaded Baked Potato Soup

This soup is thick,creamy,and full of all the great flavors and fixings of a loaded baked potato! I dish up this great soup alongside a mile high biscuit.

Loaded Baked Potato Soup
 
Ingredients
  • 3 lbs of red potatoes unpeeled and cubed
  • 32 oz of vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 1teaspoon of Trader Joes 21 seasonings salute or any seasoning you have on hand
  • 1 tablespoon minced garlic
  • canola oil to saute veggies
  • ½ cup butter (1 stick)
  • ½ flour
  • 3 cups fat free half and half
  • 1 cup shredded colby jack or cheddar cheese
  • Salt and fresh ground pepper to taste
  • Optional Toppings:
  • Cheese
  • Scallions aka green onions
  • Bacon
  • Sour Cream

Instructions
  1. Place cubed potatoes in a large pot and pour vegetable broth in, allow potatoes to fully cook
  2. Before you drain the potatoes take out 2 cups of the vegetable broth, set aside potatoes and broth
  3. In a pan- Saute carrots,celery, onion, garlic,and seasonings in a little canola oil
  4. Add butter stir until melted
  5. Add flour and mix together
  6. Add half and half and allow to simmer until thickened
  7. Using a hand masher mash the potatoes a little bit, making sure to leave the potatoes on the chunky side
  8. Add the potatoes to the veggie cream mixture
  9. Stir in the cheese
  10. Stir in the broth
  11. Allow soup to simmer until all the ingredients are blended and soup has thickened around 15-20 minutes
  12. Garnish with the good stuff and enjoy 🙂
