This soup is thick,creamy,and full of all the great flavors and fixings of a loaded baked potato! I dish up this great soup alongside a mile high biscuit.
Loaded Baked Potato Soup
Ingredients
- 3 lbs of red potatoes unpeeled and cubed
- 32 oz of vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 1teaspoon of Trader Joes 21 seasonings salute or any seasoning you have on hand
- 1 tablespoon minced garlic
- canola oil to saute veggies
- ½ cup butter (1 stick)
- ½ flour
- 3 cups fat free half and half
- 1 cup shredded colby jack or cheddar cheese
- Salt and fresh ground pepper to taste
- Optional Toppings:
- Cheese
- Scallions aka green onions
- Bacon
- Sour Cream
Instructions
- Place cubed potatoes in a large pot and pour vegetable broth in, allow potatoes to fully cook
- Before you drain the potatoes take out 2 cups of the vegetable broth, set aside potatoes and broth
- In a pan- Saute carrots,celery, onion, garlic,and seasonings in a little canola oil
- Add butter stir until melted
- Add flour and mix together
- Add half and half and allow to simmer until thickened
- Using a hand masher mash the potatoes a little bit, making sure to leave the potatoes on the chunky side
- Add the potatoes to the veggie cream mixture
- Stir in the cheese
- Stir in the broth
- Allow soup to simmer until all the ingredients are blended and soup has thickened around 15-20 minutes
- Garnish with the good stuff and enjoy 🙂
