Italian Wedding Soup

Welcome Back to the third week of Souper Tuesday! It is snowing again,every time I make soup it snows,but I keep on making it anyway! This week I am featuring one of my all time favorites..Italian Wedding Soup translated in Italian to Ministra Mariata,which means marry well.

As the folklore goes Italians would serve Ministra Mariata at their wedding to give them energy and vigor the whole night through…but the real reason it is named Ministra Mariata is because like the name says the ingredients marry well. It’s the idea of great,savory meat coming together with a rich,green vegetable in a full flavored chicken broth. I make my Italian Wedding Soup a little more on the hearty side by adding the trinity and some ditalini pasta. I serve this soup alongside my Italian Herb Round Twists.

Meatballs:
1 lb ground turkey
1 cup bread crumbs-look below for my homemade bread crumb recipe
1/2 cup fresh chopped Italian parsley
1/2 fresh grated Parmesan cheese
1 egg
olive oil to saute meatballs

Soup:
1 cup of diced carrots,celery, and onion (the trinity)
2 tablespoons of dried Italian seasonings
1 tablespoon minced garlic
1 bunch of escarole (you can also use endive,spinach or Swiss chard)
1 1/2 cup ditalini pasta
10 cups of chicken broth
fresh ground pepper to taste

Bread Crumbs: Makes 1 cup
3 or 4 slices of bread
1 tablespoon of dried Italian seasoning
1/4 grated Parmesan cheese

Toast bread,really toast it well until very crisp
Put toast in a food processor, I use my ninja, and mix until you get bread crumbs
Add in seasoning and cheese

In a soup pot pour 10 cups of chicken broth
In a pan saute carrots,celery,onion and garlic and then add to the broth
Allow to simmer while making the meatballs
Mix together ground turkey,bread crumbs,egg, Parmesan cheese, and fresh parsley
Roll turkey mixture into small balls and saute in a little olive oil
When meatballs are browned on each side add into broth
Allow to simmer for 10 minutes
Add pasta and allow to cook for about 8 minutes
Add green and allow to marry well about 15 minutes more
Serve and Enjoy 🙂

Italian Herb Round Twists:

I make this dough in the bread maker,but if you don’t have a bread maker you can still make this delicious dough. Just dissolve yeast and sugar in the warm water stir with rest of ingredients, knead and form into a ball,cover and allow to rise for one hour. Then follow the directions below!

Ingredients: 
1 1/4 cup water
1 tablespoon sugar
1 tsp salt
3 1/2 cups bread flour
1 Tablespoon dry active yeast

Topping:
1/4 cup olive oil
2 tsp garlic powder
2 Tablespoons dry Italian Seasoning
Sometimes I double the recipe and use the leftovers as a dip for the bread!

1.Allow dough ball to rise-if using a bread maker the dough comes out ready!
2.Divide dough into 12 balls
3.Roll out each dough ball
4.Begin to twist
5.Twist dough all the way around and pinch the seams together
6.Place round twists on a cookie sheet,combine topping ingredients together and with a pastry brush liberally brush topping over each round twist. Cover and allow to rise in a warm place until double in size. Reseal any round twists that come undone as they rise.
Bake at 400F for 12 to 15 minutes. Enjoy 🙂
