It’s just the girls and I at home and we are creating an Irish cake mix cookie for when the boys come back! One of our favorite cookies to enjoy are the sugar cookies with the colorful icing from Panera! The icing and the cookie together create this sweet combination!
We decided to change things up a bit and make shamrock shaped cake mix cookies with {copycat} Panera icing! We had the best time mixing, shaping, and baking these Irish cake mix cookies!
Then our green with a hint of vanilla icing spread nicely over these cake mix cookies! Shake some sprinkles on and we were ready to bite into this super sweet treat!
When the boys came home they were surprised with these great cookies! We are definitely adding these cookies to our St. Patrick Day goodies!
Irish Cake Mix Cookies with {Copycat} Panera Icing Recipe
Ingredients
- For the Cookies:
- 1-16.5 ounce box cake mix-any type-I used yellow cake mix
- 1/3 cup canola oil
- 2 eggs
- 1/2 cup sprinkles-divided
- For the Icing:
- 2 1/4 cups confectioners sugar
- 2 Tablespoons light corn syrup
- 2 Tablespoons + 1 tsp milk
- 3/4 vanilla, lemon, or almond extract
- 3 drops green food coloring-optional
Instructions
- Preheat Oven to 350F
- In a large mixing bowl, stir together the cake mix, oil and eggs. Mix well.
- Stir in 1/4 cup sprinkles.
- Take 1 Tablespoon dough, roll into a ball, and place on a cookie sheet. (For Round Cookies)
- Take 1 Tablespoon dough, roll into a ball, and flatten on a floured surface. Press shamrock cookie cutter into dough. (For Shamrock Shaped Cookies)
- Repeat until all the cookie dough is gone.
- Place on cookie sheet and bake for 10-12 minutes or until golden brown.
- While the cookies are working their magic, let’s make the icing:
- In a large bowl mix together the confectioners sugar, 2 Tablespoons milk, your extract flavor, and the green food coloring (optional).
- This icing should be thicker in consistency but still spreadable. If it is to thick add in the other teaspoon milk.
- Let the cookies cool completely before icing them. Take the remaining 1/4 sprinkles and spread evenly on cookies.
- If your shamrocks lose their shape, while the cookie is still warm press the cookie cutter into it to recreate the shape.
