I really enjoy grilled chicken with sweet red bell peppers and the summer taste of fresh basil mixed with parmesan cheese and garlic. I decided to take these great ingredients and make grilled chicken basil stuffed bread! We had this for dinner last night and it was a hit!
We served it alongside {tortellini with pesto}! It would also pair nicely with a side salad or to be enjoyed all by itself! 



Grilled Chicken Basil Stuffed Bread
Ingredients
- 6 grilled tenderloin chicken strips
- ¾ cup red bell pepper-chopped
- ½ cup fresh basil-chopped
- ½ cup plus 1 Tablespoon fresh Parmesan cheese-grated
- 1 cup part skim mozzarella cheese-shredded
- 2 garlic cloves-minced
- ⅓ cup mayonnaise
- 2 packages refrigerated french bread dough
- olive oil to brush bread
- 1 teaspoon Italian seasonings
Instructions
- Preheat Oven to 375F
- Grill chicken until done and then chop into bite sized pieces, Add to bowl.
- Add the chopped pepper, basil, garlic, cheeses, and mayonnaise.
- Stir well and set aside.
- On a cookie sheet lay both french bread doughs seam side up.
- Use a knife to cut a line straight across the middle. Using your fingers or a rolling pin create a well for the chicken mixture.
- Divide the chicken mixture in half. Add the chicken mixture to the bread.
- Take each side and pinch together, closing the seam.
- Turn bread over so that the seam side is down.
- Brush bread with olive oil and sprinkle evenly with 1 Tablespoon Parmesan cheese and Italian seasonings.
- Bake in oven for 25-30 minutes, until bread turns golden and is firm.
