As we were strolling through Sam’s Club shopping for our barbecue we saw the Swanson broth in a new six pack!! I am so excited to now have more of this hanging out in the pantry ready to be used!
Grilled Chicken and Summer Vegetables Pasta
Ingredients
- 1½ pounds chicken tenders
- ¼ cup canola oil + 1 Tablespoon-divided
- 1 Tablespoon garlic powder
- 2 Tablespoons Trader Joe’s 21 Seasonings Salute*
- 1 onion
- 2 garlic cloves
- 1 zucchini
- 1 yellow squash
- 3 carrots
- 1 lb whole wheat spaghetti pasta
- 48 ounces of Swanson Chicken Broth
- ¼ cup fresh parsley-chopped
- Parmesan Cheese to enjoy with pasta-optional
Instructions
- Place ¼ cup oil in a large Ziploc bag and add in the garlic powder, 21 Seasonings Salute and chicken.
- Let marinate for a little bit while we work on the vegetables!
- Julienne the carrots, zucchini, and yellow squash.*
- Grill the chicken.
- Place 1 Tablespoon oil in a 6 quart pan.
- Chop onion and mince garlic and add to pan.
- Saute until tender and then add chicken broth.
- Allow to come to a soft boil.
- Add pasta and boil.
- When pasta is al dente add the julienne vegetables.
- Stir well.
- Cut grilled chicken into bite sized pieces.
- Lower to a soft simmer and stir in the grilled chicken.
- Cook until your desired tenderness.
- Add parsley and Parmesan!
- Enjoy!
- *Instead of 21 Seasonings Salute you can you a combination of any dried herbs that you have on hand that would compliment the dish.
- *Instead of using a julienne peeler you could use a regular vegetable peeler and then cut the strips very thin with a knife!
