I made my first ever {white corn tortillas} and was so excited at how great they turned out that I decided to use them for this mouthwatering Mexican dish! This cheesy turkey enchilada bake is the kind of dish that makes you go mmmmmmm as you eat it! At least that’s what it sounds like at our dinner table! Ground turkey simmered in salsa and enchilada sauce, homemade corn tortillas, fresh sniped cilantro, and Mexican cheese melted throughout make this cheesy turkey enchilada bake make you want to do the cha-cha! 🙂

Cheesy Turkey Enchilada Bake



Ingredients

  • 12 {white corn tortillas}
  • 1 Tablespoon
    oil
  • 2 Tablespoons
    garlic, minced
  • 1 lb
    fresh ground turkey
  • 2 Tablespoons
    taco seasonings-I use Trader Joe’s
  • 1-10 ounce can
    enchilada sauce
  • 1 cup
    salsa
  • 2 cups
    Mexican cheese-shredded
  • 1/4 cup
    fresh cilantro-chopped
  • lime wedges and sour cream-optional
Cooking Directions
  1. Preheat oven 350F

  2. In a saute pan heat oil and garlic.

  3. Add the ground turkey and taco seasonings and cook until no longer pink, drain any liquid.

  4. Turn on low heat and add salsa and enchilada sauce, simmer for 10 minutes.

  5. Stack the tortillas up and cut into strips.

  6. Place half of the tortillas strips in a row in a 8×8 baking dish.

  7. Top with half of the turkey mixture, half the cilantro and half of the cheese.

  8. Repeat with remaining ingredients.

  9. Bake at 350F for 20 minutes.

  10. Serve with a lime wedge and a dollop of sour cream!

Want to grow your own cilantro? It’s easy! Just place coriander seeds in a pot with miracle gro garden soil and cilantro will be born! This cilantro is the result of 6 coriander seeds. Even though the flowers look great, cilantro should not grow to this point because the white flowers make the cilantro bitter. Time to give this cilantro a trim!
