We breathe the salt air, feel the sand between our toes, hear the crash of the ocean waves, and smell the boardwalk food. We are enjoying some time at one of our favorite beaches and soaking up the last bits of summer. We enjoy a walk on the boardwalk, go crazy on some of the rides, buy hermit crabs, and eat one of our favorite boardwalk sweets caramel corn. Crunchy, buttery, and caramelly warm popped corn filled to the brim is munching in our mouths. We crave this popcorn when we come home, so we made some and wanted to share our recipe with all of you!
Caramel Popcorn
2 bags microwave popcorn 1 stick butter 1 cup light brown sugar ¼ cup light corn syrup ¼ teaspoon baking soda 1 cup chocolate chips or honey roasted peanuts-optional
Ingredients
- 2 bags microwave popcorn
- 1 stick butter
- 1 cup light brown sugar
- ¼ cup light corn syrup
- ¼ teaspoon baking soda
- 1 cup chocolate chips or honey roasted peanuts-optional
Instructions
- Preheat Oven To 250F
- Pop Popcorn in microwave and set aside in a large mixing bowl; add in honey roasted peanuts-optional
- In a saucepan melt butter
- Stir in brown sugar and corn syrup
- Allow to thicken and come up to a slow boil using a medium heat
- If you are using a candy thermometer it should reach 248 degrees
- Remove from the stove top and stir in the baking soda
- Stir butter sugar mixture in with popcorn until all popcorn is nicely coated
- Place popcorn on a 9 X 13 baking pan
- Place in the oven for one hour, turn the popcorn every 15 minutes to allow the caramel to continue coating the popcorn
- Sprinkle the chocolate chips on top of popcorn during the last five minutes of baking-optional
- Remove from oven and allow to cool for 10 minutes
