Butter Cookies

Hello, friends of Three Kids and a Fish!  I’m Stephanie and I blog over at new mrs. adventures about my faith and favorites, which includes a variety of things like DIY projects, recipes, and blog link-ups.  Cathy is one of my very favorite bloggers and totally a friend in my head, so when she invited me to join in for the #cookiecountdown2christmas I jumped at the chance and am so excited to be here! 


My mother is famous for 2 things she cooks.  Her baked hams and her butter cookies.  If you are sick, hurt, or just having a hard time there is a good chance my mother will be on your doorstep soon with either one or both of these things.  She was so gracious to let me share this recipe with you all today and I hope you all love it too.  Fair warning-this is not for the health conscious or faint of heart.  If you’re counting calories or are afraid of butter look the other way.  However, if you’re looking for a decadent, chewy cookie that is super simple to make and perfect for Christmas “splurging”, I’ve got just the one.  

Here’s what you’ll need…


2 cups sugar
1 pound Fleischmann’s margarine (don’t say I didn’t warn you)
1 egg
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
4 1/2 cups flour

Beat all ingredients together except the flour, until fluffy.  Then gradually add the flour and mix well.  

If you have the time, chill the dough for an hour or 2.  However, 9/10 times I make these I don’t have time to chill them and they still turn out perfect.  Form into a walnut size ball and bake on an ungreased cookie sheet for 8-10 minutes in a 375 degree oven.  Do not over bake!  

Gobble them up just like they are.  Or, if you’re feeling overly festive, these go to a whole new level of delicious-ness with some frosting and sprinkles!
