The kids were in disbelief as I reached into the pantry, grabbed their favorite chips and began to crush them! They weren’t so sure that using them to coat the chicken was a bright idea, and one taste of this chicken changed their minds! They have been asking for Sun Chip chicken tenders ever since! This simple to make chicken recipe is worth making again!
The kids enjoyed the chicken tenders alongside sweet potato hash. Check back tomorrow as I share my recipe for sweet potato hash! I decided to get my greens in so I sliced the chicken up and served it on top of a fresh garden salad! This chicken was great the next day as we ate it on fresh rolls with lettuce, tomatoes, and fresh rosemary aioli.
- 1-10 ounce bag French Onion Sun Chips
- 1 lb fresh chicken tenders
- 2 egg whites, beaten
- 1 tsp fresh ground pepper
- Open the bag of Sun Chips, let out the air out and clip shut.
- Let out all of your frustration or energy and crush those chips into bite sized pieces!
- Place chip pieces in a tray.
- Place egg whites and pepper in a tray.
- Dip the chicken into the egg and then pat each side in chips until well coated.
- Place on a cookie sheet.
- Repeat with all chicken tenders.
- Bake in the oven at 350F for 20-25 minutes or until tenders are fully cooked.
