These grilled steak tacos are a full flavored, mouth sizzling, you have to have more than one kind of meal! We build our grilled steak tacos with flavorful steak, creamy avocado, fresh tomatoes, grilled peppers and onions and drizzled with homemade chipotle aioli! We serve these grilled steak tacos with a side of easy to make Spanish flavored rice!
Set the timer for 30 minutes and let’s get cooking!
Grilled Steak Tacos with Chipotle Aioli
Ingredients
- 1½ lbs thinly sliced Angus beef
- ¼ cup canola oil
- steak seasoning
- 2 onions
- 2 peppers-any color
- 2 avocados
- 2 tomatoes
- 1 bunch cilantro
- 8 small flour tortillas
- 8 taco shells
- +For The Chipotle Aioli
- 3 chipotle peppers-I found a small can of canned chipotles in sauce at the grocery store
- ¼ cup mayonnaise
- 1 Tablespoon lime juice
- ¼ cup finely chopped cilantro
- ¼ teaspoon cumin
- 1 teaspoon minced garlic
- +For The Rice
- I cook 1 cup of brown basmati rice and add to it 1 cup black beans, 1 teaspoon cumin, ½ teaspoon turmeric, ½ teaspoon cayenne pepper, 1 teaspoon garlic powder, and chopped cilantro.
Instructions
- Using a pastry brush, brush the oil over the meat, peppers and onions on both sides. Spread steak seasoning to your liking over the meat and veggies.
- Grill the meat and veggies until cooked. I put the veggies right on the grill to get a nice char and bring out great flavor. I use thin sliced meat because it cooks quickly. Before you slice meat and veggies thin, let them rest for five minutes.
- While that is grilling, prep your rice according to the package. Stir in the black beans, cilantro, and spices.
- To make the chipotle aioli: Finely chop the chipotles and place in a bowl with the mayonnaise, cumin, garlic, lime juice, and cilantro. Stir well.
- Slice the avocado and tomato.
- Let’s build this grilled beef taco:
- Grab a taco shell and place a flour tortilla inside. This allows everything to stay in place nicely so nothing falls apart when you bite into it. Add some meat, peppers, onions, avocado, tomato and drizzle on top some chipotle aioli. Scoop up some rice on the side, and dig in!
- Cook’s Note’s: For a less spicy chipotle aioli use one less chipotle. If making the rice uses spice to your comfort level. Add more flavor to the rice by using chicken broth instead of water!
