St. Patrick’s Day Cupcake + Printable Cupcake Topper

Celebrate St.Patrick’s Day with this sweet cupcake that has a hidden shamrock and a cute cupcake topper!

Last weekend our entire family was down for the count with the stomach bug. We did a lot of lounging around and we watched a lot of TV.

Our choice show…Cupcakes Wars.  We all had belly aches and we were watching a food show! A few episodes in and we were hooked on this sweet and fun show! 
The weekend consisted of lots of lounging, snuggling, and Cupcake Wars.

We are better now and craving cupcakes! With St. Patrick’s Day around the corner we decided to create a bakery styled cupcake that has a green shamrock shape inside and is topped with a green and white swirled cream cheese frosting.

How did we get a cute shamrock shape to be a part of the cupcake? The answer is below!

Our favorite kind of frosting is cream cheese! Our homemade cream cheese frosting is sweet, creamy and full-flavored! This time we even turned it green!

We always joke around that our blonde sweet girl is going to own a bakery some day! She really loves stirring up batter, creating new flavors, and test tasting! This cupcake was a challenge for her because of the shamrock center! The end result turned out perfectly!

St. Patrick’s Day Cupcake
 
Serves: 12 cupcakes

Ingredients
  • Green Cake:
  • ½ stick unsalted butter-softened
  • ¼ cup granulated sugar
  • 1 egg
  • ½ teaspoon vanilla
  • ¾ cup all-purpose flour
  • ¾ teaspoon baking powder
  • 3 ounces milk
  • green food coloring
  • Cupcake:
  • 1 stick of unsalted butter-softened
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cups all-purpose flour
  • 1-3.4 ounce box vanilla instant pudding mix
  • 1½ teaspoons baking powder
  • ¾ milk
  • Frosting:
  • 8 ounce cream cheese
  • 1 stick unsalted butter
  • 2¼ cup confectioner’s sugar
  • 1 teaspoon vanilla
  • green food coloring
  • Top With Sprinkles-Optional

Instructions
  1. Let’s create the green cake first! Preheat Oven to 350F
  2. In a large bowl mix together the butter and sugar.
  3. Mix in egg and vanilla.
  4. In a small bowl mix together the flour and baking powder.
  5. Alternate the flour with the milk and add to the large bowl.
  6. Add in about 4 drops of green food coloring or more until you reach the desired green color.
  7. Spread evenly in a greased 8×8 baker.
  8. Bake at 350F 15-18 minutes. Allow to cool!
  9. While the green cake is cooling let’s create the cupcake!
  10. In a large bowl mix together the butter and sugar.
  11. Mix in eggs and vanilla.
  12. In a small bowl mix together the flour, pudding mix & baking powder.
  13. Alternate the flour mixture with the milk and add to the large bowl.
  14. Mix well & set aside.
  15. Using a small shamrock shaped cookie cutter create 12 shamrocks from the green cake.
  16. Line a 12 cup muffin pan with cupcake liners.
  17. Scoop 1 Tablespoon cupcake batter into each liner.
  18. Place a shamrock in each liner.
  19. Top with 1 Tablespoon batter, making sure the shamrocks are covered.
  20. Bake cupcakes at 350F for 10-12 minutes. A little longer if needed for the center. Allow to cool!
  21. Time for Frosting:
  22. In a bowl mix together cream cheese & butter.
  23. Stir in vanilla. Slowly add the confectioner’s sugar until you have thick, smooth frosting.
  24. Divide frosting in half. Add drops of green frosting until you have arrived at the right color green.
  25. Using a dual bag decorator, easy accent decorator, or a knife- pipe, swirl or spread the frosting!
  26. Add some sprinkles and a cupcake topper!
