Lemon Pudding Cake Recipe

 
Packed with the sweet flavor of lemon in every bite this cake is sure to bring a smile to your face!
 
Recently, my hubby and I went to visit my mother in law in rehab where she was recovering from a stroke. During our visit, we enjoyed lunch together and just as she was about to push away her mostly uneaten lunch she saw a piece of lemon pudding cake sitting on the corner of her tray and her face lit up! “Oh, I’ll eat that”, she said with a smile!

The lemon pudding cake looked moist, sweet, and the perfect refreshing thing to enjoy! It was finished off with a sugary glaze that dripped down over the cake.

A few days later I was thinking about my mother in law and decided to recreate that sweet, just a little beyond golden looking cake! My version of the lemon pudding cake came out exactly as we saw it and how I would imagined it tasted! Next time we see my mother in law I am packing this lemon pudding cake in hopes of seeing her face light up again as see enjoys a slice!

Lemon Pudding Cake Recipe
 
Ingredients
  • 2 sticks butter-soften
  • 2½ cups granulated sugar
  • 6 eggs
  • 1 cup plain Greek yogurt
  • 2 Tablespoons grated lemon rind
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1-3.4 ounce package of instant lemon pudding mix
  • Filling:
  • 1 cup canned lemon pie filling
  • Icing:
  • 2 cups powdered sugar
  • 2 Tablespoons heavy cream
  • 3 Tablespoons lemon juice

Instructions
  1. Preheat Oven to 350F
  2. Grease and lightly flour a bundt pan
  3. Cream together butter and sugar.
  4. Blend in eggs one at a time.
  5. Stir in Greek yogurt.
  6. In a small bowl mix together flour, baking soda, and lemon pudding.
  7. Slowly incorporate the flour mixture into the wet ingredients.
  8. Pour ½ of the batter into the bundt pan.
  9. Swirl in the 1 cup of lemon pie filling.
  10. Pour the ½ batter into the bundt pan.
  11. Bake at 350F for 50-60 minutes until golden brown and toothpick comes out mostly clean.
  12. In a small bowl mix together the powdered sugar, heavy cream, and lemon juice.
  13. When cake has completely cooled, invert onto a serving platter.
  14. Cover with icing!
