The first time I ate an Irish potato I was dating my hubby. We were at his parents house for dinner and had just finished eating and cleaning up from dinner and his Mom asked if I would like an Irish potato.
By using cream cheese,coconut, butter and powdered sugar it makes this one sweet Irish potato.
With a deer in the headlights look I glanced over at him in hopes that he would explain why she was offering me more dinner food. My hubby just laughed,gee thanks buddy! He eventually said to me try one. I was offered a cinnamon covered coconut cream cheese delight.

Irish Potatoes
Ingredients

1/4 cup
butter,softened -
1/4 cup
cream cheese, softened -
1/2 teaspoon
vanilla -
2 cups
confectioners sugar -
1 1/2 cups
coconut -
3 Tablespoons
cinnamon
Cooking Directions
- Using a mixer, beat together butter and cream cheese
- Add in vanilla
- Add in confectioners sugar
- Add in coconut
- With your hands or a small cookie scoop create round balls
- Roll in cinnamon
- Place in fridge for 30 minutes and Enjoy 🙂
- Make about 24 Irish Potatoes
- Be sure to refrigerate the leftovers if there are any!
