Coca Cola Glazed Chicken Skewers

It’s Memorial Day weekend and we are having our kick off the summer season barbecue! We are surrounded by great friends, food, and good times as we kick back and enjoy the first of many parties! As we plan for the barbecue we go shopping at Sam’s Club to stock up on everything that we will need!
 
We get the grill going with these Coca Cola glazed chicken skewers that are full of flavor with the sweet, bubbly taste of Coca Cola!
 
This glaze is sweet and tangy with classic Coca Cola, lime, garlic, brown sugar and apple cider vinegar! With a creative labeled can of Coca Cola in one hand and a chicken glazed skewer in the other you will be good to go at any barbecue! I had a great time handing out the different Coca Cola cans labeled, bestie, superstar, grillmaster and more! It added an extra great element to an already great barbecue!
 
 
 
Coca Cola Glazed Chicken Skewers
 
Ingredients
  • 1½ pounds chicken tenderloins
  • 3 multi- colored peppers
  • 1 can Coca Cola
  • 1½ cups light brown sugar
  • 2 garlic cloves-minced
  • 2 limes
  • 1 teaspoon apple cider vinegar
  • 8 skewers
  • salt and pepper to taste

Instructions
  1. Cut the limes into quarters.
  2. Cut the peppers into big bite sized pieces.
  3. Cut chicken tenderloins in half if bigger in size.
  4. In a bowl combine together the Coca Cola, brown sugar, garlic, lime juice, and apple cider vinegar. Place in fridge.
  5. Alternate placing the chicken and pepper on the skewer, end with a wedge of the squeezed lime.
  6. Place skewers in a dish, pour glaze over skewers reserving 1 cup of of the glaze for later. Place both in fridge.
  7. Marinate for at least 2 hours, brushing the glaze on the skewers a couple of times.
  8. Grill skewers until chicken and peppers are completely cooked.
  9. With a pastry/grill brush, brush the remaining 1 cup of glaze over the skewers.
  10. Dig in!
