The back packs are filled with homework, the bell rings, students are making a mad dash for their bus and the school day is done! Thirty minutes later my kids get off the bus and make their way back home! They are tired and hungry and have only a little bit of time before we head out to after school activities!
I am always on the look out for creative, filling, good for you things for them to eat after school that will get them through the late afternoon!
These mini calzones are hand held, little pocket filled bites of yumminess! Using Farm Rich breaded mozzarella sticks, pepperoni or ham, and pizza dough I created these easy under 30 minute mini calzones!
While my kids are in school I run some errands and make a stop at Walmart to do some shopping! They have everything I need to create my mini calzones and my garden fresh tomato sauce!
Mini Calzones
Ingredients
- 1 refrigerated pizza dough
- 18 slices of pepperoni
- 3 slices of deli ham
- 6 Farm Rich mozzarella sticks-cut in half and thawed
- ¼ cup olive oil
- garlic powder and dried oregano to sprinkle on top of calzone.
Instructions
- Preheat Oven to 400F
- Roll out the pizza dough and cut into 12 squares.
- Take pepperoni and place 3 slices of pepperoni on 6 of the squares.
- Cut ham in half and place on the other 6 pizza squares.
- Place a half of a thawed mozzarella stick on top of each pizza square.
- Fold the pizza square over and seal edges with a fork.
- Press down on the center lightly to flatten out the mozzarella stick just a little bit.
- Brush with olive oil and sprinkle each with garlic powder and oregano.
- Bake at 400F for 12-14 minutes and until golden brown on top!
- Dip in sauce and enjoy!!

Mini Calzones with Garden Fresh Tomato Sauce
Ingredients
- 1 Tablespoon olive oil
- 1 pepper-diced
- 1 small onion-diced
- 2 garlic cloves-minced
- 2 cups cherry tomatoes-diced
- 28 ounce can crushed tomatoes
- 1 Tablespoon tomato paste
- ¼ cup fresh flat leaf parsley-chopped
- ¼ cup fresh basil-chopped
- salt and pepper to taste
Instructions
- In a large saucepan heat oil on medium heat.
- Add in pepper, onion and garlic. Saute until tender.
- Stir in the 2 cups of tomatoes. Simmer for a few minutes.
- Add in the crushed tomatoes and tomato paste.
- Salt and pepper to taste.
- Stir in the parsley and basil.
- Cover, lower heat to a slow simmer and allow to cook for at least 20 minutes!
