Thin Mint Ice Cream Bites

Using Girl Scout Thin Mints, ice cream, and more chocolate we create a mint chocolate ice cream bite that tastes out of this world! 
 
It’s ice cream season! Actually, we eat ice cream year round it just tastes sweeter and better this time of year! We are having friends for dinner and I created a decadent sweet ending! 
 
This simple, sweet treat is all the dessert you need to satisfy your sweet tooth in the perfect bite size chocolate ice cream bite! 
 
This chocolate ice cream bite is rich dark mint chocolate, creamy ice cream, crushed cookie bits, and topped with more chocolate! chocolate ice cream bites Choose any bite sized chocolate mold, any type of chocolate, ice cream and cookies! The sky is the limit for this bite sized dessert! Get a little fancy by creating chocolate shapes like the flower in the picture! Thin Mint Ice Cream Bites
 
Ingredients
  • 1- chocolate mold-containing 6 bite-sized molds
  • ½ cup dark mint chocolate candy melts
  • 1 tsp oil
  • 2 mint cookies-crushed-I used thin mints-crushed
  • ¼ cup mint chocolate chip ice cream

Instructions
  1. In a microwave safe bowl place the ¼ cup of chocolates with ½ tsp oil. Heat 25 seconds at a time stirring after each time until chocolate is completely melted!
  2. Fill each mold with a little chocolate-enough to cover the bottom & place in fridge until firm.
  3. Evenly spread crushed cookies over each chocolate.
  4. Using a teaspoon evenly spread the ice cream over the cookie crumbles.
  5. Place in freezer while you melt the other ¼ cup of chocolate with ½ teaspoon oil.
  6. Spoon chocolate out on top of ice cream allowing it to drip down the edges. Freeze.
  7. How do you know they are ready to enjoy? When they are completely frozen and pop out easily from the mold in one piece!
  8. This dessert can get messy, feel free to enjoy in one bite, or put it in a bowl to linger over the great flavors a little longer! 🙂
  9. **Creating the flower shape**
  10. Put any remaining chocolate in a ziploc bag, push all the chocolate to once corner, snip the corner and drizzle the shape of a flower onto parchment or wax paper. Place in fridge until chocolate is firm. Carefully remove the chocolate and enjoy!
