I paired the Progresso Bistro Cups with one of my favorite Fall Spinach Salads! This salad comes together quickly with just a few ingredients and every time I make it the salad bowl is empty in minutes!
This salad is fresh spinach, cranberries, candied pecans, gorgonzola cheese, and fresh pears in a light citrusy homemade dressing!
- 11-ounces fresh spinach
- 2 pears, any type-sliced thin
- 1 cup cranberries
- 5-ounce bag of candied pecans
- 2 ounces of gorgonzola cheese-crumbled
- ½ cup olive oil
- ¼ cup lemon juice
- ¼ cup rice or white wine vinegar
- salt & pepper to taste
- In a big salad bowl place spinach, pears, cranberries, pecans, and cheese. Toss.
- In a small bowl mix together olive oil, lemon juice, and vinegar. Mix well.
- Pour desired amount of dressing on salad, toss and enjoy!
For a peppery bite add a cup or two of fresh arugula.
I tried the Chicken Southwestern first and it was delicious! It’s one of my favorite flavored soups!
It was so warm and flavorful and went so well with my bites of my Fall Spinach Salad! It is the perfect soup and salad combination made right at home!
