My hubby is not a big fan of chocolate! While he will eat anything chocolate I make he prefers oatmeal raisin over chocolate chip. These granola cookie bars are a great alternative to the {mounds cookie bars}that I usually make!
These granola cookie bars are packed with so many good for you things and I even managed to sneak a little chocolate in there. The result-my hubby loves them! He even froze a few to save when he gets a craving!
This cookie bar creation meets with success and as you bite into one of these you will find that this nutty, coconut, cranberry, chocolate chip, and oatmeal experience is worth going back for more!

Granola Cookie Bars
Ingredients
- 1 cup-2 sticks butter, softened
- ½ cup granulated sugar
- ½ cup light brown sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 2¼ cups all purpose flour
- ½ cup chopped pecans-toasted
- ½ cup shredded sweetened coconut-toasted
- 1 cup cranberries
- 1 cup chocolate chips
- ½ cup quick oats
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
Instructions
- Preheat Oven to 350F.
- Grease a 8×8 baking dish.
- In a saute pan on low heat put the pecans and coconut-toast lightly. Set aside to cool.
- In a mixing bowl stir together the butter and sugars, and slowly add in the egg and vanilla.
- Add in the flour and baking soda, mix well.
- Add in the pecans, coconut, cranberries, chocolate chips, and quick oats.
- Mix well.
- Spread evenly in baking dish.
- Bake at 350F for 25-30 minutes.
- Cool and enjoy!
