She works diligently over a hot stove, stirring the beans, fluffing the rice, grinding the corn for the tortillas, turning the chicken in a pot boiling over. It’s 110 degrees, there are roaches crawling the floor, paint peeling from the walls, and pots and pans everywhere. I am wiping down the kitchen, and trying to organize the hundreds of dishes while I watch the woman cook as sweat drips down her brow.
I am on a missions trip and staying in an orphanage in Mexico. I fall in love with the place, the people, the ministry and the food.
My Mexican food is in no way as good as the food I enjoyed there with the amounts feeding many. I have refined my skill over the years as my Mexican dishes pay tribute to the Mexican woman who created dishes to feed the forgotten.
Filled with grilled chicken, refried beans, avocado, salsa and cheese these grilled chicken quesadillas are a family favorite! We enjoy cheesy Mexican rice, corn and black bean salsa, and corn bread as side dishes to compliment these flavor filled quesadillas. Check out my cornbread recipe, compliments of Goya, as I use it to top off my {chicken pot pie}.
- 8 chicken tenderloins, brushed with oil and southwestern seasonings and grilled until fully cooked, shred using a fork
- 8 flour tortillas
- 1-16 ounce can
- refried beans
- 2 avocados, mashed
- 1 jar salsa
- 8 ouncesnMexican shredded cheese
- Heat a non-stick skillet on the stove, get it nice and hot.
- While it’s heating build your quesadilla:
- Take a tortilla and spread refried beans over top until entire tortilla is covered
- Take some mashed avocado and spread over top of refried beans
- Place chicken on top
- Spread salsa on top of chicken
- Add cheese until chicken is covered
- Place another tortilla on top and put in skillet
- Allow to cook on each side about 4 minutes, press down on tortilla with a spatula before turning to other side
- Tortillas should be browned on each side and the cheese melted
- Remove from pan and cut into 8 wedges
- Repeat with remaining ingredients
- Makes 32 wedges. You could cut them into 6 wedges for a total of 24 if you are looking for larger quesadillas.
