It’s movie night and we need a special snack to go with it! This chocolate chip caramel corn is the perfect thing! It’s a great blend of salty and sweet, with a hint of butter throughout. The chocolate chips melt nicely over the hardened caramel. This snack is a crunchy, sweet, salty, caramel, chocolaty pop in your mouth, perfect for a movie snack!
Chocolate Chip Caramel Corn
Ingredients
- 2 bags microwave popcorn- I use the 94% fat free
- ½ cup-1 stick butter
- 1 cup light brown sugar
- ¼ cup light corn syrup
- ¼ teaspoon baking soda
- ½ cup chocolate chips
Instructions
- Preheat Oven To 250F
- Pop Popcorn in microwave and set aside in a large mixing bowl
- In a saucepan melt butter
- Stir in brown sugar
- Stir in corn syrup
- Allow to thicken and come up to a slow boil using a medium heat
- If you are using a candy thermometer it should reach 248 degrees
- Remove from the stove top and stir in the baking soda
- Stir butter sugar mixture in with popcorn until all popcorn is nicely coated
- Place popcorn a 9 X 13 baking pan
- Place in the oven for one hour, turn the popcorn every 15 minutes to allow the caramel to continue coating the popcorn
- Sprinkle the chocolate chips on top of popcorn during the last five minutes of baking
- Remove from oven and allow to cool for 10 minutes
